Fire Roasted Peach Jalapeño Salsa

Sweet, spicy, and smoky salsa that is good on everything! Even just a spoon.

  • ½ peach
  • 1 large tomato halved and seeded
  • 2 green onions
  • 1 jalapeno (more if you want it reeaaally hot)
  • 1 lime halved
  • 1 tsp. balsamic vinegar
  • 1 Tbsp. Cilantro
  • ¼-1/2 tsp. cumin
  • salt and pepper
  1. Heat grill to medium.
  2. Drizzle peach and tomato with balsamic.
  3. Place peach, tomato, green onions and lime on grill.
  4. Grill (occasionally turning and flipping) until everything is softened with nice char lines.
  5. About 7-10 mins.
  6. Remove skin from peach, tomato, and jalapeño.
  7. Leave seeds in for more heat, take out for less.
  8. Place peach, tomato, onion and jalapeno in food processor.
  9. Squeeze lime over it.
  10. Add cilantro.
  11. Pulse to desired consistency.
  12. Add cumin, salt and pepper to taste.
